Holiday party

December 9, 2011

Wow! So I catered desserts for the first time ever last night!  It was for my husband’s company’s office Christmas open house.  It was a lot of work and quite a few different sweets, but it was so much fun!

Of course, there were red velvet cake bites.  It’s not a party without them, right? :)

Then, I made some peppermint bark.  I had never made it before, but it was easy and turned out delicious!

Next, were the mini mint chocolate cupcakes.  I’ve shown the full size version of these on here before, but the minis turned out awesome!

And then there were the homemade marshmallows.  I think I got the most compliments on these.  Everyone was shocked that you can actually make ‘em and not have to buy the bag at the store! :)

I also made some cinnamon-sugar pecans, but the picture is not working out for me.  These pecans are a family staple every year at Christmas, so I had to include them for the party!

Happy Halloween (a little late)

November 8, 2011

I have been so incredibly busy these last few months-with my real job, baking, & and life.  Halloween this year was especially busy for me on the baking front.  Check ‘em out!

Someone got their own personal pumpkin patch!

I really fell in love with these.  They were for my favorite customers class at school.  Pumpkins, Black Cats, & Ghosts, oh my!

NAE

August 17, 2011

I didn’t get a picture of the final product, this is all I had.  These are for the company my brother works for.  He had been asking me for awhile to make him some for his coworkers.  I finally had the time and was going to be going home to give them to him.  He called me and told me that everyone loved them!! How can you not though…they are cake bites!

These are chocolate cake, chocolate icing, dipped in chocolate and white cake, vanilla icing, dipped in white chocolate.  I then decorated each with the company logo and color.

Death by Chocolate

August 17, 2011

This is literally death by chocolate.  My husband has declared them his favorite by far.  I tried to take a picture with a bite out of one, but it didn’t do the picture any justice.  I’ll just have to describe it to you!

These are chocolate cake, mixed with chocolate icing, with mini chocolate chips mixed in, then coated in chocolate.  These things just melt in your mouth and you’d better have a glass of milk handy! :)

Monkeying around

Are these not THE most adorable things you have ever seen?!

4th of July

August 17, 2011

We were invited to a 4th of July picnic with some neighbors we have recently met, so of course I had to bring cake bites!!

Sweet summertime

August 17, 2011

I just love summer!  And I especially love watermelon.

This was my first attempt at these and I have big plans to make them look even sweeter!

The don’t just look like watermelons on the outside…

…they have mini chocolate chips that look like seeds on the inside!

To make these, I tinted white cake pink and then mixed in the chocolate chips for a little extra surprise!

A little getaway

August 17, 2011

So, I’ve finally had a chance to get some photos edited.  Since the beginning of June, I have had quite a few orders every week, so I have been baking, baking, and more baking.  Then my camera has decided to stop taking pictures like it once did, therefore I am apologizing in advance for the blurry-not-so-great pics.  On top of that, my computer is on the fritz.  Ugh.  I have the last two months worth of projects to show you, so bear with me while I get them all out there.

First up, a little ocean getaway!

These cake bites were done with pineapple cake and white icing.  They were absolutely delicious!!  These were going to a 3 year olds school for her classmates, but I had the idea to mix some rum in with the cake for a little extra treat.  The husband & I ended up finishing the leftover cake before I could that for myself.  However, it is on my list to try one of these day!

These were for another client (not with pineapple cake), but I added the little flamingo to give it a little bit extra! :)

Lovely Ladybugs

July 14, 2011

I think I say this about all the cake bites that I make, but these are so cute!  For as long as I have been baking, I have never made anything with ladybugs, and I love ladybugs!

These were red velvet cake bites that were meant for someone’s birthday in Dallas.  The person who ordered these was going to mail them, and I warned him ahead of time that shipping might be tricky in June, but he wanted to try it anyway.  Well, they crashed and burned.  I haven’t seen a picture, but he told me that they melted completely even though it was an overnight delivery.  My foray into shipping these things is a post for another day.

Onto the cuteness…

So adorable!

Whew!

July 6, 2011

Wow! I can’t believe it’s been so long since I have posted anything.  In my mind I’ve already done it, but obviously not!  I have quite a few projects to post – some new ideas, some that have been seen before.  I have been so busy with work and life, but plan to have some downtime this weekend to get everything posted.  So, stay tuned because there is more on the way!!

I have been posting most of my completed projects on facebook, so if you become a fan of Nikki D’s Sweets there, you can get a first look at what I am working on!

:)
